Chef Carlo began his culinary career over 40 years ago within his family’s restaurant business in the province of South Sardinia, Italy. His cooking is inspired by the culinary traditions of Italy’s regions and by Mediterranean cuisine, complemented by selected international influences. Supported by his scientific education and military training, Chef Carlo also prepares Diabetic-friendly, Gluten-Free dishes and Kosher, always with attention to balance, quality, and care.
